Day 23

These days and weekends are busy, busy, BUSY! It's hard to keep up with blogging every day, but we are mostly on-track with our 24-Day Challenge. There have been a few days, here and there, where we haven't strictly kept to our meal plan, or remembered to take our supplements, but we have been good, for the most part.


We'll be giving ourselves an extra week or so to finish off our supplements, and then posting our FINAL RESULTS! YAY! 


In the meantime, I have been cooking up a storm! In the last week or so I have made a couple different vegetarian "burger" patties, homemade enchilada sauce, squash and bean enchiladas, chicken chili, lemongrass-scented tofu bahn mi, my version of Southern-style cooking (black-eyed peas and pork chops!), and some healthy "junk food" (baked chicken strips and yellow bean "fries"), all the while breaking-down and freezing the bounty of the season for use later in the year.


If you have room in your freezer, visit your farmer's market or local produce stand and pick up whatever is in season, clean it, trim it, and toss into Ziploc baggies. Your wallet will thank you in the lean winter months when your favorite fruits and veggies are out of season, and you can skip buying imported produce for double the price! We have baggies of fresh sweet white and yellow corn, green beans, black-eyed peas, bell pepper strips, lots of chilies (spicy and sweet), peaches, nectarines, strawberries, and more!
