Healthy Breakfast Burritos

So, if you know me, I love Mexican food, especially carnitas tacos and chorizo breakfast burritos! I have struggled with how to come up with healthier versions, and here is my fave breakfast burrito using soyrizo and subbing in cauliflower for potatoes.


Start by heating a bit of olive oil over medium-low heat. Add in your cauliflower and let it get a nice pan-roasty brown, about 5-7 minutes.



Toss in some onion and garlic and cook another 3-4 minutes. Add in your soyrizo and cook another 2-3 minutes until well incorporated.



Your kitchen should now be smelling like a little bit of faux-swine heaven. 

Whip up 4 large eggs, and dump in. Let them settle and cook before turning in order to really get the cauliflower and  soyrizo to be even dispersed throughout   the eggs.

When they're done, it's assembly time! Layer egg-soyrizo-cauliflower mix in your favorite wrapper with a bit of cheese and any extras you like. Today I threw in a handful of spinach and a few shots of Tapatío.

System Reboot

Where have you been? What happened? Are you still alive?!

Without going into too much detail, the last, oh, year, or so, has brought about many changes: divorce, a move, a career change, and cancer, to name a few.

Is it any wonder I have exhibited a little absenteeism, not to mention crazy weight fluctuations and the reemergence of some nasty bad habits? Yeah, almost dying will do that to you.

So, here I am, finally on the other side of it all, overweight, out of shape, smoking again, and drinking way too much. Instead of going all drill sergeant on myself, I decided to have a quiet little chat over a cup of tea. "Yes, you have made bad choices. No, you're not off the hook. The good news? You have the power to change all that, if you want it bad enough."

Today I started an AdvoCare 24 Day Challenge, which will kickstart my goal of fitting back into my favorite jeans by my birthday in February. (Yoga pants should be for yoga, not everyday attire!)

Yes, this is about losing some weight, but, more importantly, it's about losing my bad habits, losing that voice in my head that says, "You can't," and, yes, losing my yoga pants, except when I am on the mat.


It's about regaining my personal self-worth. It's about regaining the ability to carry groceries up a flight of stairs without getting winded. It's about feeling good, being healthy. It's about living a full and active life.

And, hey, let's be honest: the pseudo-spirituality and pop-psychology-Dr. Phil-touchy-feely mumbo-jumbo is all well and good, but I also want to look better naked. I'm sure Mr. Trouble won't mind that at all.

Personal Revolution

Without going into graphic detail, let's just say my life has taken a sharp left and things are different. It's time for change!

1. Quit smoking
2. Quit drinking
3. Cull bad friends/acquaintances/energy and time sucks from my life
4. Re-engage with my creative and spiritual self
5. Get back to the basics of health and nutrition
6. Move more; walking, Pilates, training, whatever
7. Express myself openly as long as it comes from a place of honesty, and is done with respect and compassion

I need your love, support, guidance, and graceful encouragement as I start over and discover this new life and define the woman that is living it.

Cleanse starting soon!


24-Day Challenge is starting again! I am looking forward to dropping another 10-15 pounds, having more energy, thinking clearer, and feeling better, all-around!

With the holidays looming, almost every weekend between now and the middle of January are booked. Parties, weddings, birthdays, dinners, holiday and family get-togethers, trips to the farm, roller coasters, and more, all while running two businesses, and going to school at night. It's easy to get overwhelmed. Our busy lives can lead to bad choices, less workout time, and feeling burned-out.

What a perfect time to re-engage with our commitment to better health and stop the burnout/bad choice cycle before it gets started! And the 24-Day Challenge is such a great tool for us to do just that.
