Day 2 (Cleanse): PM

Another great day, but I am so tired! I made Tuna-Guac for a quick afternoon snack and lunch tomorrow. Dinner was broiled salmon with a cucumber, corn, tomato, and mint salad. Yum!


Tuna-Guac:


1 can Albacore (packed in water)
1/2 Avocado
1/2 fresh lemon or 1-2 limes, juiced
Pinch of salt
Fresh cracked pepper
1/4 jalapeƱo or serrano, minced
Little bit of red onion, minced
Cilantro (optional)
1/2 rib celery, diced fine for crunch (optional)


Drain and rinse your tuna. Add to bowl with avocado and lemon or lime juice; lightly mash together with a fork. Stir in onion, peppers, celery, and cilantro. Season with salt and pepper.


Serve on a few Triscuits as an afternoon snack, or as a yummy lettuce wrap stuffing. Great over a simple bed of greens, too! Go crazy; add some fire-roasted corn, some black beans, and make it a dinner salad!
